This Andouille is the pride of the Poché establishment. It's made with coarsely ground, lean pork meat, salt, red pepper, black pepper and garlic that is stuffed into beef middle casings and smoked heavily. Andouille sausage measures 1-1/2 to 2 inches in diameter. This sausage will enhance the flavor of any dish. Try it in gumbos, beans, jambalaya, pasta dishes, grilled or even pan fried. USDA approved.
