Tur-duc-ken w/ Crawfish & Shrimp Dressing
Tur-duc-ken w/ Crawfish & Shrimp Dressing Poche's Breaux Bridge Style Tur-duc-ken is stuffed with crawfish and shrimp dressing. The chicken is stuffed with crawfish dressing. The chicken is then stuffed into the duck, and then we layer shrimp dressing around the top of the duck and inside the turkey.
The Tur-duc-ken is frozen in a vacuum sealed bag to retain it's freshness. To defrost, simply thaw in refrigerator for 2 days or for rapid thawing, place in sink with cool water for 6-9 hours.

Cooking Instructions:
Place thawed Tur-duc-ken in a roasting pan and cover with foil. Cook for 4 hours at 375 degrees. Uncover and cook for an additional hour or until internal temperature reaches 160 degrees.
A Tur-duc-ken will feed 15-20 non-Cajuns.
