Chicken Andouille is the pride
of the Poche establishment. It's made with coarsely ground, lean chicken
meat, salt, red pepper, black pepper and garlic that is stuffed into
beef middle casings and smoked heavily. Chicken Andouille sausage measures 1-1/2
to 2 inches in diameter. This sausage will enhance the flavor of any
dish. Try it in gumbos, beans, jambalaya, pasta dishes, grilled or even
pan fried. USDA approved.
