Andouille
This Andouille is the pride of the Poche establishment. It's made with coarsely ground, lean pork meat, salt, red pepper, black pepper and garlic that is stuffed into beef middle casings and smoked heavily. Andouille sausage measures 1-1/2 to 2 inches in diameter. This sausage will enhance the flavor of any dish. Try it in gumbos, beans, jambalaya, pasta dishes, grilled or even pan fried. USDA approved.
Chicken Andouille
Chicken Andouille is the pride of the Poche establishment. It's made with coarsely ground, lean chicken meat, salt, red pepper, black pepper and garlic that is stuffed into beef middle casings and smoked heavily. Poché Bridge Hot Sausage
Known as our economy sausage. While this product is short on cost, it is packed with palate-pleasing flavor that would leave any displaced Cajun homesick. If you are on a budget or simply have a lot of mouths to feed, consider this product. It will not fall short of your expectations. USDA approved.
Smoked Alligator and Pork Sausage
Fresh smoked sausage made with lean alligator (ground), blended with special seasonings. USDA approved.
Smoked Chaurice
Hot smoked sausage made with lean pork meat, seasonings, crushed garlic, vinegar, jalapeño peppers and chives stuffed into natural hog casings then smoked until rich in color and flavor. USDA approved.
Smoked Pork Sausage
Packed with lean cuts of pork meat and our own perfect blend of seasonings, this sausage is sure to enhance the flavor of any dish. Use in gumbos, beans, jambalaya or as a breakfast sausage. USDA approved.
Tasso
Large pieces of tender lean pork tumbled in a seasoning mixture of salt, red pepper, black pepper, garlic, jalapeño peppers, mustard, vinegar and liquid smoke, then smoked to perfection in our smokehouse. Tasso is used for flavoring dishes and sauces. It's delicate smoked flavor makes it the perfect ingredient for your favorite cream sauces. Terrific as a pizza topping. USDA approved.
